What to know about lemon curd
Lemon curd looks like a fruit preserve but it is really a cooked custard: lemon juice and zest thickened with butter, egg yolk and a large amount of sugar. That means the dairy is doing most of the triggering, not the citrus. It grades E for dairy proteins and D for lactose from the butter, D for FODMAPs and D on the SIBO scale from the sugar, and E for EoE compatibility because egg and dairy are both declared allergens sitting in the same jar. The citrus side is milder than people expect: histamine is C and salicylate is only B. Worth knowing that lemon on its own grades D as a histamine liberator, so if lemon fruit reliably makes you itch, the curd carries a diluted version of that in a much richer package.

- Pro-inflammatory at D.Between the sugar and the butterfat this is a treat food, and it is normally eaten on toast, scones or pastry that add their own load
