Finger lime is an Australian rainforest citrus whose flesh is not segmented in the usual way. Instead the fruit is packed with tiny spherical juice vesicles that separate cleanly when squeezed and burst individually, which is why it is sold as citrus caviar and used a few grams at a time as a finishing garnish. On the trigger chart it is quiet: clean on gluten, lactose, dairy protein, nightshade, nickel, sulfite and oxalate, with only mild grades for salicylate, histamine liberation and excess fructose. The portion helps as much as the chemistry, since a teaspoon of vesicles scattered over oysters or a dessert is a very small exposure.
