What to know about vinaigrette
Vinaigrette is the better dressing, not a clean one, and it is worth being precise about the difference. It earns its reputation on the columns creamy dressings fail: it grades A for dairy protein, lactose, gluten and nightshades, where ranch and french style dressings sit at C or worse for nightshade, free glutamate and histamine. What it does not escape is its own two ingredients. Fructans grade C because garlic and onion, usually as powder, are in nearly every bottled vinaigrette and most restaurant house dressings, and sulfites grade C because wine vinegars start life as sulfited wine and often get more added as a preservative. Histamine sits at a borderline B, since vinegar is a fermented product. The fix is not to avoid vinaigrette, it is to make it yourself.
Watch for
- Fructans C.Garlic and onion powder are the default flavour base of commercial vinaigrettes, which is what pushes total FODMAPs to a C on an otherwise simple dressing. Read the label rather than assuming oil and vinegar
- Sulfites C.Wine vinegars carry sulfites from the wine plus whatever is added as a preservative, so vinaigrette is a quiet contributor for anyone tracking sulfite reactions such as wheeze or flushing
- Vinegar is fermented, so histamine grades a borderline B.Aged vinegars are far worse than that: balsamic grades E for both histamine and sulfites, and red wine vinegar grades E for histamine and D for tyramine. Which vinegar you choose changes the dressing more than anything else does
- Italian and balsamic style bottles routinely add sugar, thickeners, cheese or anchovy, none of which appear in the name.That is where a supposedly clean dressing picks up dairy protein and glutamate
- A homemade version with a tolerated oil, a mild vinegar or a citrus you get on with, salt and no alliums drops nearly all of this.The dressing is only as complicated as you make it
