What to know about horchata
Horchata is one name over two unrelated drinks. The Valencian original, horchata de chufa, is pressed from tigernuts, which despite the name are the tubers of a sedge and not nuts at all, so the classic Spanish version is nut-free. The Mexican version, horchata de arroz, is soaked ground rice with cinnamon and sugar. Both are traditionally dairy-free, which is the reason it gets recommended to people avoiding milk, and both grade clean in our data for gluten, histamine, tyramine, caffeine, nitrites, nickel, free glutamate and nightshade. The problem is the sugar. Horchata grades high FODMAP and poor for SIBO, with excess fructose moderate, and that load comes from how heavily it is sweetened rather than from anything in the tigernut or the rice, since fructans and GOS both grade clean. It also grades moderate for lactose and dairy protein, not because the recipe calls for milk but because cafe and bottled versions so often finish it with condensed or evaporated milk. Assume nothing about a horchata you did not make.

- The cinnamon is worth a thought.The drink grades clean for salicylates, but we grade cinnamon itself high in salicylates, and a Mexican horchata can be heavily dosed with it, so a salicylate reactor should judge by how strongly the glass tastes of cinnamon rather than by the drink-level grade
- Rates pro-inflammatory and fits poorly with DASH and Mediterranean patterns, which is a sugar-sweetened beverage note rather than a chemical trigger
