What to know about vinegar

Vinegar is a fermented food, and fermentation is exactly what builds histamine, so vinegar is a moderate histamine trigger and a frequent culprit behind reactions to dressings, pickles and sauces. Many vinegars also carry sulfites, either from the wine they were made from or added as a preservative, giving a second additive trigger. The catch is that type matters a lot: aged wine and balsamic vinegars are the highest in both histamine and sulfites, while distilled white vinegar comes from a neutral base and is much lower on both, which is why some people tolerate one vinegar and not another.

Watch for

  • Fermented, so it is moderately high in histamine and a common trigger for histamine-intolerant people via dressings and pickles
  • Frequently contains sulfites, especially wine-based vinegars, adding a separate additive trigger
  • Type matters: aged balsamic and red or white wine vinegar are highest in histamine and sulfites
  • Distilled white vinegar is the gentlest, made from a neutral base with little histamine and usually no added sulfites
