Radicchio is a leaf chicory, Cichorium intybus, and its trigger profile follows the chicory family rather than the lettuces it shares a salad bowl with. Chicory stores its carbohydrate as inulin, and that shows up in the leaves as a moderate fructan grade and, unusually for a leaf vegetable, a moderate galacto-oligosaccharide grade as well. It is why a generous radicchio salad can leave someone bloated when the same volume of lettuce would not. Away from the fermentable carbohydrates it is a calm food: no histamine, no histamine liberation, clean on oxalate, clean on nickel and only borderline on salicylate. The bitterness is sesquiterpene lactones, not a graded trigger.
Watch for
- Moderate fructans, inherited from the inulin that chicory stores.It is the same plant family behind chicory root fibre, a well known cause of gas when it is added to bars and drinks
- Moderate galacto-oligosaccharides, which is rare in a salad leaf and means radicchio can behave more like a legume than a lettuce for a FODMAP-sensitive gut
- Grilling, roasting or charring radicchio changes the flavour but does not remove the fructans, so a grilled wedge is the same load as a raw one
- Soaking cut leaves in cold water is the standard trick for taming bitterness, and it only affects the bitter compounds, not the fermentable carbohydrates
- It is rarely served alone.Balsamic, gorgonzola, prosciutto and walnuts bring histamine, tyramine and sulfites that the leaf has none of, so log the dressing and the toppings separately
