Fresh salmon is remarkably clean on food chemicals: graded safe on histamine, salicylates, oxalates, FODMAPs, gluten and nickel, and rich in anti-inflammatory omega-3s. The two real caveats are not about fresh fish chemistry. Salmon is a top-six food for eosinophilic esophagitis (EoE), and like all fish it becomes a histamine and scombroid risk when it is not kept cold, so freshness and storage matter more than the fish itself.
