What to know about queso blanco
Queso blanco is the fresh white cheese of Latin American cooking, and it is made in a way that flips the usual cheese trigger profile on its head. Instead of rennet, the milk is curdled with acid, traditionally lime juice or vinegar, and the curd is pressed and eaten within days rather than ripened. Because nothing ages, almost no biogenic amines form, so it is graded low for histamine and low for tyramine, which is exactly where cheddar, parmesan and the blues are at their worst. The price of that freshness is the milk sugar. The curd is drained but not fermented, so the lactose stays in the cheese, and queso blanco is graded high for lactose along with maximum dairy protein. It is also the reason the cheese does not melt: an acid set casein network holds its shape when heated instead of flowing, which is why it softens and browns in a pan rather than stringing. Being acid set also means no animal rennet, which is why it grades as vegetarian friendly where many traditional cheeses do not.

- High for lactose.Fresh unripened cheeses keep the milk sugar that months of ageing would otherwise consume, so this is one of the few cheeses where the bloating and the loose stools really are the lactose
- Maximum grade for dairy protein.Acid setting changes the texture but not the casein, so it is no safer for a cow milk protein allergy than any other cheese
- Low for histamine and low for tyramine, which is the genuine advantage here and the reason it appears on low amine plans where aged cheese is banned outright
- Moderate for free glutamate and for histamine liberation, worth logging if you react to savoury dairy without reacting to the milk sugar
- Rated poor for SIBO and high in lectins, and it is not eosinophilic oesophagitis compatible since it is a straight dairy protein source
