Serving size, prep, and portion notes for flounder

Flounder is a lean flatfish and one of the calmest proteins on the board: clean grades for salicylates, oxalates, nickel, sulfites, glutamates, tyramine, gluten and every FODMAP column. Its two non clean grades are both mild and both explainable. It sits at borderline for histamine, which reflects ordinary fish freshness rather than scombroid risk, and at mildly rather than strongly anti inflammatory, because a lean white fish carries a fraction of the omega 3 in salmon or trout. If you are rebuilding a diet after an elimination phase, flounder is usually one of the early safe proteins.

Watch for

Not a scombroid species. The seafood histamine scares come from dark fleshed, high histidine fish such as tuna, mackerel, mahi mahi and sardines. Flounder is white, lean and low in histidine, which is why it grades borderline rather than high, but it still has to be kept properly cold / Finned fish is one of the food groups removed on an EoE elimination diet, so flounder is marked incompatible there. That is an allergen classification, not a food chemistry trigger / Rated mildly anti inflammatory rather than strongly, so if you are eating fish specifically for omega 3, flounder is not doing that job / The trigger usually arrives with the preparation, not the fish: breadcrumbs and dusting flour bring wheat, stuffed flounder brings crab or cream, and a caper and butter pan sauce adds histamine that the fillet itself does not have
