Serving size, prep, and portion notes for lard

Lard is rendered pork fat, and on food chemistry it is quiet. It grades A for histamine, histamine liberation, tyramine, nickel, sulfites, nitrites, glutamates, gluten, lactose and dairy protein, with a single B for salicylates, so it is rarely the thing behind a reaction if you are tracking those triggers. What stands out on its card is diet fit. It is graded E for vegan and E for vegetarian, correctly: rendering does not stop a pork fat being an animal product, and lard hides in refried beans, tamales, tortillas, pastry and some breads where a menu will not mention it. It is also graded E for DASH, E for Mediterranean and E on the anti-inflammatory scale, all reflecting the same thing, that it is roughly forty percent saturated fat. The last thing worth knowing is that lard is not one product: leaf lard from around the kidneys is mild and prized for pastry, while the shelf-stable block in a supermarket is frequently hydrogenated and stabilised with added antioxidants.

Watch for

Graded E for vegan and E for vegetarian, and this one is correct rather than a data artefact. It also rules lard out for halal and kosher eating, and it turns up unlabelled in refried beans, tortillas, tamales, pie crust and some commercial pastry / Graded E on the anti-inflammatory scale and E for both DASH and Mediterranean patterns. These are diet-pattern scores driven by saturated fat content, not sensitivity triggers, so they matter for a cardiovascular or inflammation plan and not for a histamine or FODMAP one / Salicylates are its only non-A food-chemistry grade, at B, which is low enough that it is unlikely to be what sets off a salicylate-sensitive reader / Supermarket block lard is often hydrogenated for shelf stability and carries BHA or BHT as antioxidants. Leaf lard, butcher-rendered lard and lard you render yourself do not. If additives are your suspected trigger, the label is what matters here, not the fat / FODMAPs are listed as unrated for lard, though each individual FODMAP subgroup grades A and pure rendered fat contains essentially no carbohydrate, so it is not a realistic FODMAP concern
