Cedar nuts are the seeds of the Siberian pine, sold across Russia and Eastern Europe as a snack and pressed for cedar nut oil. Their trigger grades are almost blank: A on histamine, histamine liberation, tyramine, salicylates, oxalate, gluten, lactose, sulfites and glutamates, with only nickel borderline and FODMAPs mild at a small serve. The reaction people actually report from this family of nuts is not an allergy at all. It is pine mouth, a bitter metallic taste that turns up one to two days after eating and then hangs around for over a week, which is exactly the kind of delayed effect a food journal is built to catch.

Pine mouth, also called pine nut syndrome, is a taste disturbance rather than an allergic reaction. A constant bitter or metallic taste appears one to two days after eating and lasts around nine days on average, up to about two weeks, then resolves on its own with no lasting effects. / The delay is what fools people. Because symptoms start a day or two later, most of us blame whatever we ate that morning. If a metallic taste sets in, look back two days in your log, not two hours. / The species matters more than the brand. Cases have been traced to nuts of Pinus armandii, a cheaper white pine that gets blended into generic commercial pine nut packs. Nuts sold specifically as Siberian cedar nuts are bought precisely to sidestep that lottery. / Do not confuse rancidity with pine mouth. These are very high-fat seeds that go rancid quickly, and rancid nuts taste bitter in your mouth immediately and smell of old paint. Pine mouth arrives later and makes other food taste wrong. / Nickel is graded borderline, as it is for nuts generally, and a small serve of roughly 14 g keeps the mild FODMAP load low.
