Buffalo is the least precise word on a menu, and for a trigger journal that ambiguity matters more than any grade. In North America buffalo means bison. In Italy, India and Southeast Asia it means water buffalo, a genuinely different animal. On a wing menu it means neither: buffalo sauce is cayenne hot sauce emulsified with butter, named after the city of Buffalo, with no buffalo of any kind in it. This entry is graded as the plain red meat, which is why it comes out clean on lactose, gluten, salicylates, oxalates, histamine, tyramine, sulfites, nitrites, glutamates and nightshades, with only a mild B on FODMAPs. That grading is accurate for the meat and actively misleading if what you actually ate was wings. Before you conclude buffalo is safe or unsafe, work out which of the three things you logged.

Watch for

If the reaction came from wings, log buffalo sauce rather than buffalo. The sauce is graded high on nightshades from the cayenne, high as a histamine liberator, and it carries dairy from the butter that finishes it. None of that exists in the meat / Restaurant and butcher buffalo in the United States is bison. Actual water buffalo is a separate entry with its own, slightly different grades, so pick the one you ate rather than assuming / Whichever bovid it came from, it is mammalian meat, so alpha-gal syndrome applies with its delayed reaction hours after the meal. That is the one thing bison and true buffalo share and buffalo sauce does not / The clean histamine grade describes fresh meat. Minced, aged, slow thawed or reheated buffalo climbs the same way beef does, so freshness is the variable to control / Clean on every FODMAP group.
