Why fructans food checker matters
Fructans are chains of fructose molecules found in wheat, onions, garlic, and many other foods. They're a type of FODMAP that can cause digestive symptoms in sensitive individuals because they're not well absorbed in the small intestine.
- Garlic-infused oil is low-FODMAP since fructans don't dissolve in oil
- Green parts of leeks and scallions are lower in fructans
- Sourdough bread may be better tolerated than regular wheat bread

Anaphylaxis after alligator has been reported in fish-allergic people / A second, separate parvalbumin closely matches the chicken version, so the small number of people with true chicken meat allergy can react to alligator as well / Hardly anyone eats alligator plain. It reaches the table as flour-breaded deep-fried nuggets or under a heavy blackening rub, and that batter and spice blend is where the wheat, FODMAPs and additives actually come from / Alligator sausage, andouille and boudin are mixed, cured products.
