Alligator is the rare meat that answers the alpha-gal question differently. It is a reptile, not a mammal, so it carries none of the galactose-alpha-1,3-galactose that puts beef, pork and venison off the table after a lone star tick bite, and it grades A straight across the trigger chart: no histamine, no tyramine, no salicylate, no oxalate, no FODMAPs, no nickel, no sulfites, no nitrites, no free glutamate. The one genuine caveat is an allergy caveat rather than a chemistry one. Crocodilian muscle is unusually rich in parvalbumin, the protein family behind most fish allergy, so fish-allergic and chicken-allergic eaters are the group with a documented reason to be careful with gator.
