What to know about grape syrup

Grape syrup is grape must boiled down until it is a thick dark sweetener, sold as petimezi in Greece, pekmez in Turkey and saba or vincotto in Italy. Concentration is the entire trigger story. Grapes already carry more fructose than glucose, and reducing the juice several fold keeps that ratio while multiplying the dose per spoon, so grape syrup is graded high in excess fructose and high FODMAP. It is also a poor fit for low fermentation SIBO diets. Outside that one mechanism it is remarkably clean: low salicylate, low oxalate, low histamine, no polyols and no histamine liberation, so if you react to it, fructose malabsorption is the first thing to test rather than a broad sensitivity.

  • Mild sulfite grade.Commercial grape products can carry residual sulfites from the fruit and processing, which is worth noting if you are sulfite sensitive, though it is not the main concern here
