Serving size, prep, and portion notes for duck fat

Duck fat is pure rendered poultry fat, which makes it one of the easiest cooking fats to clear on a sensitivity diet. It grades A on lactose and dairy protein, so it is a genuine butter replacement for anyone avoiding dairy, and A across every FODMAP column because there is no carbohydrate in it to ferment. Histamine, salicylates, oxalates, nickel, sulfites and glutamates are all clean too. It is about half monounsaturated fat and takes heat to roughly 190C without breaking down, which is why it outperforms butter on roast potatoes. The two things worth checking are what else is in the tub, since fat sold as confit fat or reused from a confit batch carries salt, garlic and meat juices, and how old it is, because rendered fat left warm or open oxidises and goes rancid.

Watch for

Fat you have poached confit in is not plain duck fat any more. It has taken on salt, thyme, bay and above all garlic from the cure, so reusing it puts fructans into everything you fry in it / Flavoured tubs are common: truffle, garlic, herb and smoked duck fat all exist, and the garlic ones defeat the point for anyone on low FODMAP. Check the label rather than the picture on the front / Rendered fats oxidise. Duck fat kept in a warm cupboard or scraped back into the tin after a roast goes rancid, and rancid fat tastes stale and sits badly. Keep it cold, covered and in date / It grades D for DASH fit and D for anti-inflammatory. That is a saturated-fat pattern judgement rather than a sensitivity trigger, but it is the honest caveat on a fat you are pouring over potatoes / Roast potatoes cooked in duck fat pick up whatever the tray held before.
