What to know about mutton
Mutton is meat from a mature sheep, usually over a year old, and it is far cleaner in a trigger journal than its strong reputation suggests. It carries no gluten, no lactose, no dairy protein, no salicylate, no oxalate and no nickel, and plain mutton is low FODMAP. Two things are worth knowing. Mutton grades moderate on both histamine and tyramine, higher than lamb does, because older meat is hung longer and mutton is nearly always slow-cooked and reheated, which is exactly when amines accumulate. And because it is mammalian meat, alpha-gal syndrome applies to mutton in full, the same as to beef, pork or lamb.
