Jackfruit seeds are the large pale kernels buried in the fruit that most Western recipes throw away and most of South and Southeast Asia does not. They are a genuinely separate food from jackfruit flesh, with their own row and their own grades, and the important thing about them is that they must be cooked. Raw jackfruit seed carries trypsin inhibitors and lectins that make it both hard to digest and mildly toxic.
Watch for
- Never eat them raw.Raw jackfruit seeds contain trypsin inhibitors that block protein digestion and haemagglutinins that clump red blood cells in the lab. Boiling for around twenty minutes or roasting through destroys both. This is a cooking rule, not a preference.
- Graded moderate on lectins, oxalate, nickel and SIBO fermentation.The lectin grade is the one that is actually about the raw seed; cooking is what brings it down.
- Every FODMAP column is unrated.The seeds are starchy and eaten in quantity, so an unknown here is a real unknown rather than a safe default.
- They are a different food from the flesh.Jackfruit flesh has its own grades and its own FODMAP behaviour, so a reaction to a jackfruit curry could belong to either part.
- Not AIP compliant, since the autoimmune protocol removes seeds during elimination.
