What to know about cane juice
Fresh pressed cane juice is sugarcane stalk run through rollers and drunk straight, and chemically it is close to the simplest thing in this database: water, sucrose, and traces of minerals and plant polyphenols. It grades A on every food chemistry trigger we track. No histamine, no histamine liberation, no salicylates, no oxalate, no nickel, no sulfites, no free glutamate, no gluten, no lactose, no caffeine, no nitrites. It is also graded A for FODMAPs and A for excess fructose, which catches people out, but sucrose is one glucose bonded to one fructose, so it delivers the two in balance and never leaves fructose in excess the way honey or apple juice do. If you are working through an elimination diet and cane juice is on your suspect list, the data says look elsewhere. The two grades that are not A are both about sugar as sugar rather than sensitivity: fermentability under a low fermentation SIBO protocol is D, and it reads as pro inflammatory in the same way any concentrated free sugar does. The other thing worth knowing has nothing to do with the drink at all. Evaporated cane juice, printed on an ingredients panel, is not this. It is sugar, and it is a name US regulators specifically told manufacturers to stop using.

- Evaporated cane juice on a label is not this drink.It is sugar produced from cane syrup, and the FDA told manufacturers in 2016 to declare it as sugar because calling it juice is not a truthful description of an ingredient that is not a juice
- What gets added at the cart is more likely to be your trigger than the cane.Lime is the standard squeeze into fresh cane juice and it is graded a strong histamine liberator in our data, and ginger and mint are common too. If you react, note the additions separately
- It is pressed to order and unpasteurised for a reason: cane juice oxidises and starts to ferment quickly once it leaves the stalk, so it does not keep.That makes freshness, and the cleanliness of the press and the ice, a practical consideration rather than a trigger one
- It is still free sugar in liquid form, which is why it grades poorly against DASH and reads as pro inflammatory.That is a dietary pattern note rather than a sensitivity, and the honest framing is quantity, not avoidance
