What to know about catfish

Catfish is one of the quieter proteins in a trigger journal: graded clean on gluten, lactose, every FODMAP column, salicylates, oxalates, nickel, glutamates, tyramine and lectins, with no nightshade, sulfite or dairy flags. Its single non-clean grade is histamine, and only at borderline. Farmed catfish tends to go from pond to ice within hours, which is exactly the handling that keeps fish histamine low.
