What to know about spaghetti squash
Spaghetti squash is the winter squash whose cooked flesh pulls apart into strands, which is why it gets used as a pasta stand-in. The useful thing to know is that it does not behave like the rest of its family: butternut squash is graded high for polyols and D overall on FODMAPs, whereas spaghetti squash grades A for polyols, fructans, GOS and fructose and only B on total FODMAP load. So the classic winter-squash gut problem largely does not apply here. What it does carry is a high lectin grade (E) and a moderate salicylate grade (C), and those are the two columns to watch.
Watch for
- Graded E for lectins, the highest flag on this record.Winter squash flesh and seeds both carry them, so this is a poor choice during a strict lectin-avoidance phase even though it looks like an innocuous vegetable
- Graded C for salicylates, moderate rather than high.Enough to matter on a strict salicylate elimination, not enough to worry about if salicylates are not your issue
- Borderline B for total FODMAPs but clean on all four individual FODMAP columns, so portion size is the variable, not a specific sugar.This is the opposite of butternut, where polyols do the damage
- What goes on top usually outranks the squash.Parmesan brings tyramine and histamine, tomato sauce brings nightshade and free glutamate, and pesto brings both nuts and hard cheese
- If a squash tastes intensely, unmistakably bitter, do not eat it.Bitterness in the gourd family signals cucurbitacin, which causes acute cramping and diarrhoea. It is rare in commercially grown squash and more of a risk with home-saved seed
