What to know about plantains

Plantains are cooking bananas, and in a trigger journal they behave much more like a potato than a fruit: starchy, savoury when green, and never eaten raw. They are rated clean on gluten, lactose, dairy protein, histamine, histamine liberation, nickel, free glutamate, sulfites and nightshades, with only a mild FODMAP rating, which makes plantain one of the easiest staple starches for people juggling several sensitivities at once.
