Margarine is a plant-oil spread built as a butter substitute, and on the food-chemistry triggers it is mostly clean: low histamine, low salicylate, no nickel and no added glutamates. The catch is the ingredient list. Many margarines are not actually dairy free, using whey, milk solids or buttermilk, which is why it grades borderline on both lactose and dairy protein and can catch out anyone buying it to avoid butter. Beyond that, its story is a nutritional one: the seed oils and the trans-fat history behind older hydrogenated formulas are why it reads as mildly pro-inflammatory rather than a true sensitivity trigger.
