What to know about pineapple juice
Pineapple juice lands in the moderate band across most of what we measure: moderate FODMAP and excess fructose, moderate salicylate, moderate oxalate, and a poor rating for low fermentation SIBO protocols, because juicing strips the fiber and leaves concentrated fruit sugar with nothing to slow it down. The distinctive part is bromelain, a protein digesting enzyme powerful enough to tenderise meat, stop gelatin from setting and make your mouth tingle while you drink. Bromelain is destroyed by heat, so fresh pressed juice and shelf stable pasteurised juice are genuinely different drinks even when the label says the same thing.
Watch for
- Rated poor for low fermentation SIBO approaches: liquid fruit sugar arrives in the small intestine fast and with none of the fiber that would normally slow it, which is the usual reason a glass of juice bloats someone who tolerates the whole fruit
- Moderate on FODMAPs and on excess fructose, so a small glass is usually workable while a large one delivers the sugar of several pineapples in a couple of minutes
- Fresh and unpasteurised juice still has active bromelain: expect tingling lips and tongue, real stinging on a mouth ulcer or a sore throat, and gelatin desserts that never set.Canned and long-life juice has been heated, which inactivates the enzyme
- Salicylate is rated moderate for the juice.Note that whole pineapple carries a higher salicylate rating and is rated a histamine liberator, while the juice is simply unrated on liberation, so if fresh pineapple flushes you, trial the juice cautiously rather than treating it as a different food
- It is acidic, around pH 3.4, which is enough to aggravate reflux, tooth sensitivity and mouth ulcers independently of any of the ratings above
