What to know about kombucha

Kombucha is sweetened tea fermented by a culture of bacteria and yeast, and fermentation is both why it is interesting and why it belongs on a trigger list. Every column that fermentation touches moves. Kombucha grades moderate for histamine content, moderate as a histamine liberator and moderate for tyramine, which is the full set of biogenic amine flags in one bottle. On top of the amines it keeps residual caffeine from the tea it was brewed on, keeps unfermented sugar (moderate FODMAP with some residual fructose and polyols), carries a small amount of alcohol as a yeast by-product, and is both acidic and carbonated.   • Trace alcohol.Yeast produces ethanol alongside the acids, and kombucha sold as non alcoholic in the US has to stay below 0.5 percent ABV, while home brews and long ferments can run higher. Worth knowing in pregnancy, in recovery, or alongside medication
