What to know about corn grits

Corn grits are naturally gluten free and low FODMAP, and they grade clean on histamine, salicylates, free glutamates, nickel and sulfites, which makes them one of the calmer hot breakfasts for a reactive gut. The one trigger they genuinely flag is lectins, where grits grade high. The other soft spot is not the corn at all: it is cross contamination, because most grits are milled and shipped on lines that also handle wheat.
