What to know about bamboo shoots

On everything else they are unusually quiet: no gluten, no lactose, no salicylate, no nickel, no free glutamate, not a nightshade, and only a mild FODMAP load, which is why they are a standard filler in low FODMAP stir fries. The other thing worth knowing has nothing to do with sensitivities. Fresh raw shoots contain taxiphyllin, a cyanogenic compound that releases hydrogen cyanide, which is exactly why bamboo shoots reach the shops already boiled or canned rather than raw.
Watch for
- Graded high in oxalate, which puts bamboo shoots in the same conversation as spinach and rhubarb if you form calcium oxalate kidney stones or are following a low oxalate protocol
- Soluble oxalate leaches into cooking water, so shoots that were boiled with the water discarded carry less than shoots simmered in a sauce that stays on the plate
- Raw fresh shoots contain taxiphyllin, a cyanogenic glycoside that releases hydrogen cyanide when the tissue is cut or chewed, concentrated towards the growing tip.It breaks down readily in boiling water, which is the reason for the traditional long boil and the reason canned and vacuum packed shoots are safe as sold
- Mild on FODMAPs rather than free of them, so a very large serving can still contribute to a load, but a normal stir fry portion is not the thing setting off a flare
