What to know about honey crystals

Honey crystals are honey with the water taken out: liquid honey dried onto a carrier, usually maltodextrin, and ground into free flowing granules for dry mixes, cereals, rubs and instant drinks. Drying does nothing to the sugars, so everything that makes honey a difficult food for a sensitive gut comes through concentrated. Honey crystals grade at the very top of the scale for excess fructose and for FODMAPs overall, and they grade poorly for low fermentation and SIBO approaches. There is also a safety point that gets lost when honey stops looking like honey: the infant botulism advice that applies to the jar applies to the powder too, because it is about bacterial spores in the honey rather than the form it is sold in.

Watch for

  • Excess fructose grades at the maximum.Honey is the textbook excess fructose food and removing the water concentrates it rather than diluting it, so a teaspoon of the powder is not a teaspoon of the liquid
  • High FODMAP overall and poor on low fermentation and SIBO plans, which shows up as bloating and wind from breakfast cereals, granolas and instant drink mixes where it is a background ingredient
  • Infant botulism advice still applies.Honey in any form, including dried, powdered and baked into products, is not recommended for babies under twelve months, because the concern is heat resistant spores rather than the moisture
  • It is usually not pure honey.Most honey crystals are honey spray dried onto maltodextrin, a rapidly absorbed glucose polymer, so check the label for the actual honey percentage before treating it as a natural sweetener
  • Not vegan, though it is vegetarian, and it grades pro inflammatory as a concentrated sugar
