Bourbon is a corn-based whiskey, and because distillation leaves the gluten protein behind in the mash, the spirit itself is gluten-free even though it starts from grain. The catch is the alcohol: bourbon is graded a strong histamine liberator, which is why a couple of pours can bring on flushing, a stuffy nose or a headache even though the whiskey carries little histamine of its own. It is low FODMAP and clean on lactose and dairy, so the trigger story here is almost entirely about the ethanol, not the grain.

- Gluten-free by distillation.Bourbon is made from corn and other grains, but the gluten protein stays behind in fermentation, so the spirit is safe for most people avoiding gluten. Watch only for flavored bottles with ingredients added after distilling.
- Graded pro-inflammatory and poor for SIBO, so it can aggravate a sensitive or overgrown gut even in modest amounts.
