Bourbon is a corn-based whiskey, and because distillation leaves the gluten protein behind in the mash, the spirit itself is gluten-free even though it starts from grain. The catch is the alcohol: bourbon is graded a strong histamine liberator, which is why a couple of pours can bring on flushing, a stuffy nose or a headache even though the whiskey carries little histamine of its own.
