Shrimp carries two separate problems. It is one of the big shellfish allergens, and it is frequently treated with sulfites (sodium metabisulfite) on the boat or in processing to stop the black spotting called melanosis. That sulfite residue is a real trigger for sulfite-sensitive and asthmatic people. Shrimp also builds up moderate histamine as it ages, so freshness matters as much as the label.
