The complication is that hardly anyone outside the Nordic north meets reindeer in that state. It travels as suovas, the Sami cold-smoked salted cut, as air-dried strips, as cured sausage, and as the frozen paper-thin shavings thrown straight into a pan for poronkaristys. Smoking, salting and drying are exactly the processes that generate histamine and tyramine, so the grade on this page describes the raw material rather than whatever is in the packet you bought.

Watch for

Suovas, dried reindeer and reindeer sausage are matured products and should be logged as their own entries. Cold smoking in particular involves hours at temperatures warm enough for bacteria to keep working, which is the amine-building window rather than a kill step. / The frozen shavings are the happy exception. Reindeer sold as a frozen block and planed straight into a hot pan never spends time chilled and unfrozen, which is the state amines actually accumulate in. If cured reindeer bothers you and poronkaristys does not, that is the mechanism. / Reindeer is a cervid. Chronic wasting disease was confirmed in wild reindeer in Norway in 2016, the first case in the species and the first in Europe, and Norway responded by culling an entire herd. Commercially herded reindeer sits inside national surveillance programmes. / Reindeer is mammalian meat, so alpha-gal syndrome covers it exactly as it covers venison. / The traditional plate is where the triggers actually are: reindeer is served with lingonberry, a cream or butter sauce and mashed potato, and cream is the lactose that the meat has none of.
