What to know about pork loin

Pork loin is the lean roasting joint, and as fresh meat it is one of the cleaner proteins: low in histamine, gluten free, low FODMAP and free of dairy, sulfites and nickel. The catch is that a loin is cooked as a large joint and eaten over several days, and that is exactly where histamine intolerance gets caught out. A roast that is carved, chilled and served again mid-week has aged in the fridge, and reheated roast pork carries far more histamine than the slice you ate straight from the oven.

Watch for

  • Freshly roasted loin is low histamine, but a big joint eaten as leftovers over two or three days keeps building histamine while it sits: portion and freeze what you will not eat the first day
  • Lean loin is low salicylate on its own; glazes, honey-mustard crusts and fruit sauces are where salicylates and added sugars come in
