What to know about goat meat
Goat is eaten by more of the world than almost any other red meat, and it is one of the cleaner ones on this app. It grades A on gluten, lactose, every FODMAP category, salicylates, oxalates, nickel, sulfites, nitrites, glutamates and tyramine, with histamine at a moderate B. It even scores better than beef, lamb and pork on the inflammation column (B rather than E), which comes down to how lean it is: goat carries a fraction of the fat of comparable cuts of lamb or beef. The caveats are not chemical ones. Goat is mammalian meat, so alpha-gal applies exactly as it does to beef and lamb, and goat is nearly always cooked slowly in a heavily aromatic base (curry goat, birria, barbacoa, nihari) where the trigger load lives in the pot rather than the meat.
Watch for
- Alpha-gal syndrome applies.Goat carries the galactose-alpha-1,3-galactose sugar found in all non-primate mammal meat, so if a tick bite has left you reacting to beef, pork or lamb, goat will do the same. Reactions are characteristically delayed by three to six hours, which makes them easy to blame on the wrong meal
- Goat is graded moderate (B) on histamine, and the way it is cooked amplifies that.It is a tough meat that gets braised for hours and is very often better on day two, but slow cooking followed by refrigeration and reheating is exactly how histamine climbs in meat. If goat bothers you and fresh lamb does not, test a freshly cooked portion before blaming the animal
- The base does the damage in most goat dishes.Curry goat, birria and barbacoa are built on onion and garlic (high fructans), tomato and dried chilli (nightshades), and often a vinegar or citrus marinade. A goat curry can be a heavy trigger meal made from a low-trigger meat
- Goat is usually sold bone-in and hard-bargained into a stew with the marrow left in, and goat stock reduced for hours develops free glutamates through long simmering even though the raw meat grades A.Worth noting if you react to umami-rich broths
