What to know about chervil
Chervil is the quiet member of the French fines herbes, a lacy anise-scented leaf that wilts within minutes and therefore gets stirred in at the very end, in handfuls rather than pinches. That serving style is exactly why its moderate salicylate grade (C) is worth noticing: a soft green herb scattered raw over an omelette or a sauce delivers far more of the compound than a quarter teaspoon of a dried seed spice would. Chervil also grades as a mild histamine liberator (B) with mild free glutamate (B) and mild oxalate (B), while its own histamine content, nickel, sulfite, gluten and all four FODMAP groups come out clean. So this is not a big trigger food. It is a food that quietly stacks, which matters if you are running a salicylate elimination or already close to your threshold.

- Moderate salicylate grade (C), which sits between the clean herbs and the loud ones.For scale, dill weed grades A, chives and cilantro B, tarragon C alongside chervil, parsley and oregano D, and basil E
- Because it is delicate and heat-sensitive, chervil is used raw and generously.Portion size does more work here than the grade alone suggests, and a garnish that covers the plate is not a pinch

- Chervil rarely arrives alone.Classic fines herbes pairs it with tarragon (also moderate on salicylates) and parsley (high), so the blend can carry a much bigger salicylate load than the chervil in it does
- Another Apiaceae herb, in the same family as celery, carrot, fennel and dill, which links it to the birch and mugwort pollen cross-reactivity cluster.That is a true allergy mechanism, separate from every grade above
