What to know about light cream

Light cream, also sold as coffee or table cream, is cream with less butterfat than heavy cream, around eighteen to twenty percent. Lighter does not mean dairy-free: the milk protein it carries is graded high, and it holds a moderate amount of lactose, so the dairy triggers are much the same as richer cream.
