What to know about ham
Ham is cured pork, and the curing is exactly what turns it into a trigger food. It is very high in nitrites from the curing salts and high in histamine that builds up as the meat is salted and aged, so deli ham and sliced sandwich ham are common reasons for flushing, headaches or a blocked nose.
