What to know about pepper jack

Pepper jack is Monterey Jack studded with jalapeño or other chili peppers, and its trigger profile comes from the cheese, not the flecks of chili. It grades high in dairy protein, high in histamine as a semi aged jack cheese, and high in free glutamate, the umami amine that can read as a headache or flush for sensitive people.
