Why glutamates food checker matters
Glutamates, including MSG, are flavor enhancers found naturally in many foods and added to others. Some people report sensitivity causing headaches, flushing, or other symptoms, though research on 'MSG syndrome' is mixed.
- MSG goes by many names - look for 'glutamate' on labels
- Naturally high in soy sauce, fish sauce, and aged cheeses
- Tomatoes and mushrooms are naturally high in glutamates
- Yeast extract and hydrolyzed proteins contain glutamates
- Fresh, unprocessed foods are generally lower

What to know about squid
Squid here means the whole animal: mantle tube, tentacles, wings and ink sac, bought raw or frozen rather than battered and fried. That distinction matters, because squid carries a noticeably wider flag list in our data than the calamari entry for the same animal. Squid grades moderate for histamine and tyramine, low-moderate for sulfites, nitrites, free glutamates and fermentability, and borderline for salicylate and oxalate. It stays clean on gluten, lactose, every FODMAP group, nickel, dairy protein and nightshade. The sulfite line is the one most people have never heard: in the EU, sulphur dioxide and sulphites are specifically permitted on fresh, frozen and deep-frozen cephalopods at up to 150 mg/kg to stop the flesh browning, so a plain-looking squid tube from a fish counter can carry sulfites with no batter and no ingredient list attached. The glutamate rating reflects the fact that squid is naturally umami-dense and that its ink, sold as a colour and flavour in its own right, concentrates that character further. Squid is also a mollusc allergen sharing tropomyosin with octopus, cuttlefish and often shrimp.
Watch for
- Sulfites are legally permitted on fresh and frozen cephalopods at up to 150 mg/kg in the EU to prevent browning.Prepacked squid must declare it above 10 mg/kg, but a fish counter often will not volunteer it, so ask if sulfites are your trigger
- Our data puts squid at moderate for both salicylate and oxalate, higher than the calamari entry for the same animal. If you count either strictly, log squid on its own rather than assuming seafood is a zero
- Squid spoils fast and its histamine and tyramine load climbs with time on ice, so buy it firm and glossy with no pink discolouration, and write off anything that sat out at room temperature
- Rated moderate for free glutamates, and squid ink concentrates that umami character. An ink pasta or ink risotto stacks squid on squid if MSG-type flushing or headache is your pattern
- Squid is much higher in dietary cholesterol than a white fish fillet of the same weight, which is worth knowing if you have been told to keep an eye on it
