What to know about sardines
Sardines are one of the cleanest foods on the chart and one of the worst for histamine at the same time. They grade clear on gluten, lactose, dairy protein, salicylates, oxalates, sulfites, nitrites, glutamates and lectins, they are graded anti-inflammatory, and they are AIP, DASH and Mediterranean friendly. But they grade high on histamine, the top of the scale, because dark oily flesh is packed with free histidine that bacteria convert to histamine the moment the catch warms up. If sardines on toast reliably bring on flushing, a pounding head or a racing heart while white fish never does, histamine is almost certainly the reason.
Watch for
- Graded high in histamine (E), the same tier as aged cheese and cured meat.Histamine forms in the fish before you buy it, so there is nothing you can do in the kitchen to bring it back down.
- Canning does not fix it.Heat kills the bacteria but histamine itself survives cooking and sterilising, which is why a sealed tin can still be a strong trigger.
- Moderate tyramine (C), worth knowing if you take an MAOI or if tyramine reliably sets off your migraines, since fish tends to be overlooked on those lists.
- Moderate nickel (C), which matters if you have systemic nickel allergy and are already limiting canned foods and shellfish.
- Clean on every FODMAP group, so anything fermentable comes from the tin rather than the fish.Sardines in tomato sauce or a spiced dressing bring their own ingredients along.
