Flageolet beans are the pale green French beans picked before they mature, then dried away from the light so they keep their colour, and served classically alongside a leg of lamb. That immature harvest is what gives them their thin skin and creamy bite, but it does not make them a gentle legume. Flageolets carry the top rating for galacto-oligosaccharides, the worst possible rating for SIBO among common beans, high lectins and high nickel, with moderate oxalate on the side.
