Flageolet beans are the pale green French beans picked before they mature, then dried away from the light so they keep their colour, and served classically alongside a leg of lamb. That immature harvest is what gives them their thin skin and creamy bite, but it does not make them a gentle legume. Flageolets carry the top rating for galacto-oligosaccharides, the worst possible rating for SIBO among common beans, high lectins and high nickel, with moderate oxalate on the side. They are clean on gluten, lactose, salicylates and nightshades, so if flageolets sit badly the cause is fermentation and mineral load rather than food chemistry.

- Top rating for GOS combined with the worst SIBO rating of the everyday beans, which makes flageolets a poor choice while bacterial overgrowth is being treated
