What to know about beef liver
Beef liver is the most nutrient dense food most people ever eat, and that is also its only real problem. As a food chemical it is quiet: graded clean on gluten, lactose, FODMAPs, salicylates, oxalates, nickel, glutamates and lectins. What it carries instead is a pharmacological dose of preformed vitamin A and copper. A single 100 g serving runs to several times the adult daily upper limit for retinol, which is why liver is the one whole food routinely ruled out in pregnancy. It is also among the highest purine foods there is, and it grades borderline on histamine the way most offal does.

- Graded borderline on histamine.Offal degrades faster than muscle meat, so buy it fresh or frozen, cook it promptly, and do not keep cooked liver sitting in the fridge for days
- Only borderline for DASH, Mediterranean and anti-inflammatory eating, which is a diet-pattern note rather than a sensitivity trigger: liver is very high in cholesterol and is not a food those patterns are built around
