Sensitivity notes

Why glutamates food checker matters

Glutamates, including MSG, are flavor enhancers found naturally in many foods and added to others. Some people report sensitivity causing headaches, flushing, or other symptoms, though research on 'MSG syndrome' is mixed.

  • MSG goes by many names - look for 'glutamate' on labels
  • Naturally high in soy sauce, fish sauce, and aged cheeses
  • Tomatoes and mushrooms are naturally high in glutamates
  • Yeast extract and hydrolyzed proteins contain glutamates
  • Fresh, unprocessed foods are generally lower

What to know about beef liver

Beef liver is the most nutrient dense food most people ever eat, and that is also its only real problem. As a food chemical it is quiet: graded clean on gluten, lactose, FODMAPs, salicylates, oxalates, nickel, glutamates and lectins. What it carries instead is a pharmacological dose of preformed vitamin A and copper. A single 100 g serving runs to several times the adult daily upper limit for retinol, which is why liver is the one whole food routinely ruled out in pregnancy. It is also among the highest purine foods there is, and it grades borderline on histamine the way most offal does.

Watch for

  • Preformed vitamin A is the limiting nutrient, not the protein. One serving can exceed the adult daily upper intake for retinol several times over, it accumulates in the liver rather than washing out, and high retinol intake in pregnancy is linked to birth defects
  • One of the richest copper sources in the diet, which is a benefit for most people and a hard exclusion for anyone with Wilson disease or told to restrict copper
  • Extremely high in purines, so liver is a standard exclusion for gout and recurrent uric acid attacks
  • Graded borderline on histamine.Offal degrades faster than muscle meat, so buy it fresh or frozen, cook it promptly, and do not keep cooked liver sitting in the fridge for days
  • Only borderline for DASH, Mediterranean and anti-inflammatory eating, which is a diet-pattern note rather than a sensitivity trigger: liver is very high in cholesterol and is not a food those patterns are built around
