What to know about lamb liver
Lamb liver is the mild one. It is smaller, softer and far less metallic than ox liver, which is why it is the default liver in British butchers, in Levantine kibdeh, in Turkish arnavut cigeri and in South Asian kaleji. Milder on the palate does not mean milder on the grades. Lamb liver flags moderate (C) on histamine, on histamine liberation and on tyramine, all three at once, which is the same amine profile as chicken liver and broader than beef liver, which flags only histamine. On the chemistry columns it is clean: A on gluten, lactose, all four FODMAP groups, salicylates, oxalates, nickel, sulfites, nitrites and glutamates. The other reason to be careful with it has nothing to do with intolerance. A single 100g portion carries around 7,800 micrograms of preformed vitamin A, roughly two and a half times the adult daily upper limit for retinol.
Watch for
- Three amine columns flag at once: histamine C, histamine liberation C and tyramine C.Organ meat is amine-dense and degrades faster than muscle meat, which is why liver appears on most low-histamine avoid lists. If you are testing it, buy it the day you cook it, cook it that day, and do not keep the leftovers
- Preformed vitamin A is the standout issue.Around 7,800 micrograms of retinol per 100g cooked, against an adult upper limit of 3,000 micrograms per day. Public health guidance in the UK and elsewhere is to avoid liver and liver products entirely in pregnancy because high retinol intake is linked to birth defects, and to keep liver to about once a week otherwise
- Liver is among the highest purine foods there is, which matters if you have gout or are managing urate levels.This is separate from the amine grades and applies to every liver, not just lamb
- How lamb liver is cooked adds most of the rest.British liver and onions is floured (gluten) and often served with bacon (nitrites) and onion gravy (fructans). Kibdeh and kaleji are fried hard with garlic, chilli and onion. Turkish arnavut cigeri is flour dusted and served on raw sumac onions. The liver itself grades A on all of those columns
- Lamb liver is mammalian offal, so alpha-gal applies.Anyone reacting to beef or lamb after a tick bite should treat liver the same way
