Venison is one of the cleanest proteins in the database on food-chemistry triggers: graded clear on histamine, histamine liberation, tyramine, free glutamate, salicylate, oxalate, nickel, sulfite, nitrite, gluten, lactose and every FODMAP group. If you are elimination-testing and need a red meat that is unlikely to confound the result, plain fresh venison is a strong candidate. Its two real problems are not chemistry at all. Wild-shot deer can carry lead fragments from the ammunition, which is well documented and badly under-known, and venison is mammalian meat, so it carries alpha-gal for anyone sensitised by a tick bite.

Lead from ammunition is the underrated risk in wild venison. Radiographs of donated deer packages have repeatedly found metal fragments scattered well beyond the wound channel, and several health agencies advise that young children and pregnant people avoid rifle-shot game. Copper or other non-lead ammunition, or farmed venison, removes the issue / Alpha-gal syndrome applies here as it does to beef, pork and lamb. The reaction is delayed by roughly two to six hours after eating, which is exactly why people miss the connection and blame the evening meal instead / The clean amine grade describes fresh venison. Game hung for a week or more, or vacuum-packed and forgotten in the fridge, builds biogenic amines the way any maturing meat does. Buy it dated and use it promptly if amines are your issue / Processed venison is a different food. Venison sausage, salami, jerky and anything smoked or cured adds nitrites, salt and often sulfites, and none of the clean grades on this page carry over to them / Venison is extremely lean, so it is nearly always cooked with butter, bacon fat, red wine, juniper or a berry sauce.
