What to know about veal
Veal is young beef, and the two grade differently in ways worth knowing. Veal comes out clean across the plant chemistry triggers: no FODMAPs, no gluten, no lactose, no salicylate, no oxalate, no nightshade and no nickel, and it is graded favourably on inflammation where fattier beef is graded pro-inflammatory, which follows from how lean it is. Where veal slips slightly is amines. It is graded moderate for histamine while plain beef is graded clean, and that is a freshness and handling story rather than something intrinsic to the meat, because histamine builds up in meat that sits and cooking will not remove it. The bigger caveat is not on the grade chart at all. Veal is mammalian meat, so it carries alpha-gal, and anyone with alpha-gal syndrome after a tick bite reacts to veal exactly as they do to beef, pork and lamb.

- Graded moderate for histamine, a notch above plain beef.Buy it fresh, cook it promptly and do not leave leftovers for days, since histamine climbs in stored meat and survives cooking

- A minority of people with cow milk protein allergy also react to beef and veal through bovine serum albumin, more so when the meat is served rare
