What to know about duck leg

A fresh duck leg grades A on everything we track: zero FODMAPs, no gluten, lactose or dairy protein, no salicylates, oxalates, nickel, sulfites, nitrites or added glutamate, and low histamine with no liberator effect. The complication is that almost nobody eats duck leg fresh. The default preparation is confit, and confit is not a cooking method so much as a preservation method: the leg is packed in salt (usually with garlic, thyme and bay, and in commercial versions curing salt) for a day or more, poached slowly in fat, then sealed under that fat and kept for weeks or months. Salt-cured protein held in storage is the textbook setup for histamine and tyramine to accumulate, so the grades on this page describe the raw leg and stop describing your dinner the moment the leg goes into the salt.

Watch for

  • Confit is a cure plus long storage, not just slow cooking.A leg that has spent weeks under fat has had time to build biogenic amines that the fresh leg it started as did not have, which is the single most useful thing to know about this ingredient if you track histamine
  • Most confit recipes and virtually all tinned confit cure the legs with garlic, and commercial versions frequently add curing salt for nitrites.Both are on the label, and neither belongs to the plain meat
  • Rillettes, potted duck and duck ragu are all built from cooked leg held for days or weeks.Treat them as stored meat, not as a fresh cut
  • Cassoulet is the usual destination for a confit leg and it brings haricot beans and sausage with it, which is a heavy GOS and fructan load plus cured pork the duck is getting blamed for
  • A plain roasted or braised fresh leg carries none of that.Cook it the day you buy it and it is as clean as chicken thigh
