Caraway seed is one of the genuinely quiet spices in a trigger journal: it grades clean on histamine, histamine liberation, salicylates, oxalate, nickel, sulfites, free glutamate and every FODMAP group. If caraway seems to set you off, look at what it arrived in rather than at the seed. Caraway lives almost entirely in rye bread, sauerkraut, goulash and caraway-studded cheeses, and each of those has its own loud trigger (gluten and fructans in rye, fermentation histamine in sauerkraut, aged-cheese histamine and tyramine). The other thing worth knowing is that caraway is not cumin. They are different plants that happen to look alike in a jar, and the carvone in caraway is what gives rye bread its flavour, not anything cumin does.
