Anchovies are one of the highest-histamine foods on a fish list, graded E. They are not sold fresh: the fillets in the little tin or jar have been packed in salt and left to cure and ferment for months, and that curing is exactly the process that builds histamine and tyramine in fish protein. Anchovy is also graded D for tyramine and D for free glutamate, which is why a few fillets deliver so much savoury depth for their size. Everything else reads clean (no gluten, no lactose, no FODMAPs, no salicylate, no oxalate), so if anchovies reliably give you flushing, a headache or a stuffy nose, histamine and tyramine are the two things worth logging, not the fish itself being hard to digest.

Watch for

Histamine graded E, the top of the scale. Months of salt curing is a fermentation, and fermented fish is the classic histamine load, so a reaction can arrive within an hour of a Caesar salad or a few fillets on pizza / Tyramine D, which matters if you get migraine attacks or take an MAOI. Tyramine and histamine ride together in cured fish, so a bad anchovy day can be either one / Free glutamate D. The umami punch is real, and glutamate-sensitive people sometimes describe the headache from anchovy separately from the histamine flush / Finned fish is a major declared allergen, and anchovy is graded E for EoE compatibility. A true fish allergy is a different mechanism from histamine intolerance and is not dose-tolerant / Sulfite C, a moderate note. Some jarred and marinated anchovies (boquerones, white anchovies in vinegar) carry added preservative on top of the salt
