What to know about radicchio
Radicchio, the red Italian chicory, has a short and specific trigger profile: high salicylates, and very little else. It grades clean on histamine, gluten, lactose, nightshades, sulfites and nickel, and its oxalate content is unrated here rather than high. The bitterness that defines it comes from sesquiterpene lactones, the daisy family compounds, not from the salicylates, so taming that bitterness by grilling the head or by buying a winter Treviso sweetened by frost changes the flavour without changing the grade that matters. The practical catch with radicchio is that people rarely eat it on purpose. It is a standard component of tricolore and mixed Italian salad bags, so it arrives in the log as "salad".
